Dough.M.G - the expression I use when all of my protein packed cookie dough balls are rolled out, placed on my non-stick baking sheet and are about 15 minutes away from being dunked into my milk. In other words, #itsacookingthing

It’s taken me awhile to figure out how to keep these cookies moist while maintaining fibre, protein and flavour – Becel Buttery margarine and unsweetened applesauce definitely helped. I used gluten free vanilla protein powder in this recipe since it was a request, but it is completely optional. My oats were also gluten free making it a suitable option for my sister who has celiac disease.

Chocolate Oatmeal Raisin Protein Cookies

Makes 14 servings – 1 cookie/serving.

Ingredients

2c oats, quick

1 scoop vanilla protein powder (optional)

¼ tsp sea salt

1 tsp baking soda

3 tbsp Becel Buttery Margarine

1/2c unsweetened apple sauce

1 egg

2 tsp vanilla extract

¼c dark chocolate chips

1/4c raisins (optional)

2 tbsp chia seeds

Preheat oven to 350F. Set a medium sized non-stick baking sheet (or one lined with parchment paper) to the side.

In a medium sized bowl, mix together oats, protein powder, sea salt and baking soda.

In a large bowl, cream together the margarine and apple sauce. Add the egg and vanilla extra, and mix well.

Slowly add the oat mixture into the wet mixture. Once well combined, add the chocolate chips, raisins and chia seeds. Mix well.

Form 14 cookie dough balls and place on baking sheet. Bake for approximately 13-14 minutes or until the bottoms are golden brown. Let cookies cool prior to eating. Enjoy!

Note: The cookie dough mixture will be more moist/wet than the typical cookie due to the use of margarine and applesauce. The use of protein powder is optional. I used a protein powder that was approximately 110calories, 15g protein.
